The art of making bread in Valle del Zalabí is an art and a discipline whose secret is our bread artisans, our bakers. In Trópolis, they share generously their knowledge to make the best bread. The local artisan bakers are:
HORNO EL PATRÓN – Avda. La Villa (Alcudia de Guadix)
José Luis Olea is the current owner of the bakery Horno de El Patrón. He learnt the profession from his father and continues his legacy making the same bread dough every day for 70 years.
BAKERY SIERRA – Avda. La Villa (Alcudia de Guadix)
Juan Sierra is the fourth generation of bakers in his family. He knows the temperature of his wood-fired oven without any external help only with his intuition. His bakery’s motto is “bread is health” and his secrets are: the temperature of the water and the quality of the ingredients.
BAKERY OTILIA IN CHARCHES
Otilia and her sister followed the steps of their parents and grandparents. Their grandparents started their business in 1959. They work with an impressive wood-fired oven of 3 m2 with a capacity to bake 80 kilos of bread. Their secret is always to respect the oven’s tempo, and they never forget to “sweep” the base of their breads to get ride of any remaining ashes or flour.
INOCENCIA – IN CHARCHES
Inocencia started her business in 2012. It is a relatively new bakery and their secret is to work with natural local ingredients and to produce a good handmade bread.
